What a thrill to discover that Pievalta is being served at Osteria Pane e Salute in Woodstock, Vermont, where chef Caleb Barber and wine director Deirdre Heekin (above) run one of the grooviest food and wine programs in the U.S. today!
“Our wine list offers over one hundred natural, organic, or biodynamic traditional, artisanal, terroir-inspired, and sometimes hard-to-find Italian wines,” writes the couple, who have authored a number of books on their enogastronomic experiences in Italy and in the U.S.
“Our hope is to represent as many typical, regional, and indigenous styles and varietals of Italian wines that we can, and pair them with traditional dishes and flavors made from our own local ingredients.”
Currently, Pievalta Dominè 2008 is on the list.
Wow, than you SO much, Caleb and Deirdre! Everything about your restaurant and your work — your ethos — aligns with what winemaker Alessandro Fenino is trying to achieve at Pievalta in the Marches. We are thrilled to see the wine as part of your program. Grazie…
